Cut out large black "doctors" bag. Have the children color with large colored chalk (dustless chalk works best). Also, have children put band-aids on the bag using character band-aids that are now available. Good for little fingers.

Have children put sticker "stamps" on large white envelopes. Talk about the postman while "mailing" your letters in a box you have designated the mailbox. Toddlers love to put things through small slots.
