Slowly stir in a can of canned pumpkin. (I usually only add 3/4 of the can) If you can add brown sugar and cinnamon to taste. Let it sit for 5 minutes and it's ready to eat! Tastes just like pumpkin pie! I've also poured the pudding into a graham cracker pie crust and let it chill for an hour for a no bake pumpkin pie! Kids spread frosting on wafer then make Jack O'Lantern faces with chocolate chips then gobble them up! GREAT PUMPKIN COOKIE RECIPE 2c. flour 1c. quick oatmeal 1t. baking powder 1t. cinnamon 1/2t. salt 1c. oleo, softened 1c. brown sugar 1c. sugar 1 egg, slightly beaten 1t. vanilla 1c. pumpkin 1c. chocolate chips candy corn Oven at 350 degrees. Combine flour, oats, soda, cinnamon, and salt. Cream butter, gradually adding sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. For each cookie, drop 1/4c. dough onto lightly greased cookie sheet; spread into pumpkin shape, using a thin spatula. Add a bit more dough to form stem. Bake 20-30 minutes. Remove from heat making a face on cookie with candy corn. Put back in oven for 1-2minutes. Remove from cookie sheet and cool. Makes 20 cookies. KIDS AND ADULTS LOVE THEM!! (even if they don't like pumpkin).
10-7-00Popcorn Pumpkins In microwave melt 1/4 c. oleo and a 10 1/2 oz. bag of mini marshmallows on high for 1-2 min. to melt oleo and puff marshmallows. Stir in a 4 serving size orange Jell-O mix well. Pour over 3 qts of popped popcorn (12 cups) Have children grease their hands well and form the popcorn into a pumpkin. 10-2-002 bundt cakes put together makes a really great pumpkin. A little orange frosting and some creative thinking and you'll have an edible pumpkin. This idea is a lot of work but the reward on young children's faces it well worth it. Take an orange and cut the top off like you would a pumpkin. Remove the inside of the orange and put in a bowl to fill pumpkin with later. Now fill with orange or any fruit or pudding. To keep cover of orange secure use a toothpick. Yummy Pumpkins Needed: cream cheese, English muffins, raisins, orange food coloring Have the children mix the orange food coloring into the cream cheese to make it a wonderful "pumpkin" color. Next, have the children spread the orange cream cheese on their English muffins.
